Ingredients:
- 1 cup mixed nuts (almonds, walnuts, pecans)
- 1 cup rolled oats
- 1/2 cup honey
- 1/4 cup coconut oil
- 1/2 cup dried fruits (raisins, cranberries, apricots)
- 1/4 cup shredded coconut
- 1/2 tsp cinnamon
- Pinch of salt
Instructions:
1. Preheat the oven to 350°F (180°C) and line a baking dish with parchment paper.
2. In a large bowl, mix together the mixed nuts, rolled oats, dried fruits, shredded coconut, cinnamon, and salt.
3. In a small saucepan, heat the honey and coconut oil over low heat until melted and well combined.
4. Pour the honey mixture over the nut and oat mixture, and stir until everything is evenly coated.
5. Press the mixture into the prepared baking dish, using a spatula to flatten it out evenly.
6. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown.
7. Remove from the oven and let it cool completely before cutting into bars.
8. Store the nutty granola bars in an airtight container at room temperature for up to a week.
