Oatmeal Peanut Butter Pepper Scramble
Ingredients:
- 2 cups oatmeal
2 tablespoons peanut butter
- 1 red pepper, diced
- 4 eggs
- 1 teaspoon cinnamon
- 1/2 cup shredded cheese
- 1/2 cup cooked chicken, diced
- 1/2 cup plain yogurt
Instructions:
1. In a large bowl, mix together the oatmeal, peanut butter, and cinnamon.
2. Heat a large skillet over medium heat and add the diced red pepper. Cook for 3-4 minutes, stirring occasionally, until the pepper is softened.
3. Add the oatmeal mixture to the skillet and cook for another 2-3 minutes, stirring occasionally.
4. In a separate bowl, whisk together the eggs and yogurt.
5. Pour the egg mixture into the skillet and stir to combine. Cook for 5-7 minutes, stirring occasionally, until the eggs are cooked through.
6. Add the cooked chicken and shredded cheese to the skillet and stir to combine. Cook for another 2-3 minutes, stirring occasionally, until the cheese is melted.
7. Serve the oatmeal peanut butter pepper scramble warm. Enjoy!
