Make Octopus and Saffron Rice Bowl
Octopus and Saffron Rice Bowl
Ingredients:
-1 large octopus, cleaned and cut into bite-sized pieces
-1/2 teaspoon saffron threads
-1 cup uncooked white rice
-1 cup snap peas, trimmed and cut into 1/2 inch pieces
-2 tablespoons tamari
Instructions:
1. Bring a large pot of water to a boil. Add the octopus pieces and cook for 10 minutes.
2. Remove the octopus from the pot and set aside.
3. Add the saffron threads to the boiling water and stir to combine.
4. Add the rice to the boiling water and stir. Reduce the heat to low and simmer for 15 minutes.
5. Add the snap peas to the pot and simmer for an additional 5 minutes.
6. Drain the rice and vegetables and transfer to a large bowl.
7. Add the cooked octopus and tamari to the bowl and toss to combine.
8. Serve warm. Enjoy!
