Octopus and Saffron Rice Bowl

Ingredients:

-1 octopus, cleaned and cut into bite-sized pieces
-1/4 teaspoon saffron threads
-1 cup uncooked white rice
-1 cup snap peas
-2 tablespoons tamari

Instructions:

1. Bring a large pot of water to a boil. Add the octopus and cook for 10 minutes.

2. Meanwhile, in a separate pot, bring 2 cups of water to a boil. Add the saffron threads and rice and cook for 15 minutes, or until the rice is tender.

3. Add the snap peas to the boiling water with the octopus and cook for an additional 5 minutes.

4. Drain the octopus and snap peas and transfer to a bowl.

5. Add the cooked rice and tamari to the bowl and mix to combine.

6. Serve the octopus and saffron rice bowl warm. Enjoy!
