Healthy Chicken and Vegetable Rice

Ingredients:

- 2 cups of cooked white or brown rice

- 2 boneless, skinless chicken breasts, cut into cubes

- 2 cups of mixed vegetables (such as broccoli, carrots, bell peppers, etc.)

- 2 tablespoons of healthy oil (such as olive oil, avocado oil, etc.)

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the chicken cubes and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through.

3. Add the vegetables and cook for an additional 5 minutes, stirring occasionally.

4. Add the cooked rice and stir to combine.

5. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender and the rice is heated through.

6. Serve and enjoy!
