Okra Potato Curry

Ingredients:

- 2 tablespoons of oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of garam masala
- 1 teaspoon of turmeric
- 1 teaspoon of chili powder
- 1 large potato, diced
- 2 tomatoes, diced
- 1 cup of okra, chopped
- 1/4 cup of besan
- 1/4 cup of maida
- 1/4 cup of atta
- 1 cup of cooked beans
- 1/2 cup of fresh coriander, chopped
- 1/2 cup of fresh spinach, chopped

Instructions:

1. Heat the oil in a large pan over medium heat.

2. Add the onion and garlic and cook until the onion is softened and lightly browned.

3. Add the cumin, coriander, garam masala, turmeric, and chili powder and cook for 1 minute.

4. Add the potato and tomatoes and cook for 5 minutes.

5. Add the okra, besan, maida, and atta and cook for 5 minutes.

6. Add the cooked beans, coriander, and spinach and cook for 5 minutes.

7. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.

8. Serve hot with rice or naan. Enjoy!
