Cheesy Tomato Garlic Pasta

Ingredients:

- 2 tablespoons of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 large tomatoes, diced
- 2 eggs
- 8 ounces of pasta
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of grated cheese

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.

3. Add the tomatoes and cook for an additional 2 minutes.

4. Crack the eggs into the skillet and scramble until cooked.

5. Meanwhile, bring a pot of salted water to a boil.

6. Add the pasta and cook until al dente, about 8 minutes.

7. Drain the pasta and add it to the skillet with the tomato and egg mixture.

8. Stir in the salt and pepper.

9. Sprinkle the cheese over the top and stir until melted.

10. Serve hot.
