Cheesy Tomato and Onion Pasta
Ingredients:
-1 onion, diced
-2 tomatoes, diced
-2 cloves garlic, minced
-2 tablespoons olive oil
-1/2 cup shredded cheese
-1/2 pound pasta
-Salt and pepper, to taste
Instructions:
1. Bring a pot of salted water to a boil and add the pasta. Cook until al dente, about 8 minutes.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
3. Add the tomatoes and cook for an additional 2 minutes.
4. Drain the pasta and add it to the skillet. Stir in the cheese and season with salt and pepper to taste.
5. Serve hot and enjoy!
