Spanish Rice

Ingredients:

-1 cup of white rice
-1 onion, diced
-1 teaspoon of salt
-2 cloves of garlic, minced
-1 tomato, diced
-2 tablespoons of olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced onion and cook until softened, about 5 minutes.

3. Add the garlic and cook for another minute.

4. Add the rice and stir to combine with the onion and garlic.

5. Add the diced tomato and salt and stir to combine.

6. Add 2 cups of water and bring to a boil.

7. Reduce the heat to low and cover the skillet.

8. Simmer for 20 minutes, or until the rice is cooked through.

9. Fluff the rice with a fork and serve. Enjoy!
