Spaghetti Carbonara

Ingredients:

- 8 ounces of spaghetti
- 2 eggs
- 1 tomato, diced
- 1/2 onion, diced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cloves garlic, minced
- 2 tablespoons olive oil

Instructions:

1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.

2. Meanwhile, in a medium bowl, whisk together the eggs, tomato, onion, salt, pepper, and garlic.

3. When the spaghetti is done cooking, drain it and return it to the pot.

4. Heat the olive oil in a large skillet over medium heat. Add the egg mixture and cook, stirring occasionally, until the eggs are cooked through and the tomato and onion are softened, about 5 minutes.

5. Add the egg mixture to the pot with the spaghetti and stir to combine. Serve immediately. Enjoy!
