Garlic Parmesan Pasta
Ingredients:
- 8 ounces of pasta
- 2 cloves of garlic, minced
- 2 eggs
- 1/2 cup of grated Parmesan cheese
- 1/2 teaspoon of salt
- 1/4 cup of diced onion
- 1/2 cup of diced tomato
- 2 tablespoons of olive oil
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.
2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until softened, about 5 minutes.
3. Add the diced tomato and cook for an additional 2 minutes.
4. In a small bowl, whisk together the eggs and Parmesan cheese.
5. Once the pasta is cooked, drain and add to the skillet with the garlic and onion.
6. Pour the egg and cheese mixture over the pasta and stir to combine.
7. Cook for an additional 2 minutes, stirring occasionally, until the eggs are cooked and the cheese is melted.
8. Serve hot, topped with additional Parmesan cheese if desired. Enjoy!
