Vegetable Fried Rice
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced bell peppers
- 1/2 cup diced zucchini
- 1/2 cup diced cabbage
- 1/2 cup cooked rice
- 1/2 cup cooked potatoes, diced
- 1/2 cup cooked pasta
- 1/2 cup spinach, chopped
- 2 eggs, lightly beaten
- 1/4 cup grated Parmesan cheese
- 1/4 cup grated cheese
- 1 tomato, diced
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, garlic, carrots, celery, bell peppers, zucchini, and cabbage. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
3. Add the cooked rice, potatoes, pasta, spinach, eggs, Parmesan cheese, and grated cheese. Cook, stirring occasionally, until the eggs are cooked through, about 5 minutes.
4. Add the tomato and season with salt and pepper. Cook for an additional 2 minutes.
5. Serve the fried rice warm. Enjoy!
