Penne with Roasted Vegetables

Ingredients:

-1 pound penne pasta
-1 onion, diced
-1 red bell pepper, diced
-3 cloves garlic, minced
-1 large tomato, diced
-1 teaspoon salt
-1 teaspoon paprika
-1 teaspoon oregano
-1 teaspoon basil
-3 tablespoons olive oil

Instructions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, combine onion, bell pepper, garlic, tomato, salt, paprika, oregano, basil, and olive oil. Mix until all ingredients are evenly distributed.

3. Spread the vegetable mixture onto a baking sheet. Roast in preheated oven for 20 minutes, stirring occasionally.

4. Meanwhile, bring a large pot of salted water to a boil. Add penne and cook until al dente, about 10 minutes.

5. Drain the pasta and add it to the roasted vegetables. Toss to combine.

6. Serve the penne with roasted vegetables warm. Enjoy!
