Cheesy Chicken and Rice
Ingredients:
- 2 cups of cooked white rice
- 2 chicken breasts, diced
- 2 eggs, beaten
- 1 cup of shredded cheese
- 1 onion, diced
- 1 bell pepper, diced
- 1 tomato, diced
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced chicken and cook until golden brown, about 5 minutes.
3. Add the onion, bell pepper, tomato, and garlic and cook for an additional 3 minutes.
4. Add the beaten eggs and stir to combine.
5. Add the cooked rice and stir to combine.
6. Add the shredded cheese and stir to combine.
7. Season with salt and pepper to taste.
8. Reduce the heat to low and cook for an additional 5 minutes, stirring occasionally.
9. Serve and enjoy!
