Tomato and Garlic Pasta with Rice

Ingredients:

- 8 ounces of pasta
- 1 large tomato, diced
- 2 cloves of garlic, minced
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup of cooked rice
- 2 tablespoons of olive oil

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.

2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 3-4 minutes, stirring occasionally, until the vegetables are softened.

3. Add the garlic and tomato and cook for an additional 2-3 minutes, stirring occasionally.

4. When the pasta is done cooking, drain it and add it to the skillet with the vegetables.

5. Add the cooked rice and stir to combine.

6. Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through.

7. Serve warm. Enjoy!
