Tomato Rice
Ingredients:
- 2 cups of long grain white rice
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tomatoes, diced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 cup of shredded cheese
Instructions:
1. Heat the olive oil in a large saucepan over medium heat.
2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
3. Add the rice and stir to combine.
4. Add the tomatoes, salt, and pepper and stir to combine.
5. Add 2 cups of water and bring to a boil.
6. Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked.
7. Remove from the heat and stir in the cheese.
8. Serve hot. Enjoy!
