Cheesy Tomato Rice Pasta

Ingredients:

-1 cup of uncooked white rice
-1 cup of uncooked pasta
-1/2 cup of shredded cheese
-1 large tomato, diced
-1/2 onion, diced
-2 cloves of garlic, minced
-1/2 teaspoon of salt
-1/4 teaspoon of black pepper
-2 tablespoons of olive oil

Instructions:

1. In a large pot, heat the olive oil over medium heat.

2. Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.

3. Add the rice, salt, and pepper and stir to combine.

4. Add 2 cups of water and bring to a boil.

5. Reduce the heat to low and simmer for 15 minutes, or until the rice is cooked.

6. Add the pasta and tomato and stir to combine.

7. Simmer for an additional 10 minutes, or until the pasta is cooked.

8. Remove from heat and stir in the cheese.

9. Serve warm. Enjoy!
