Cheesy Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 tablespoons of olive oil

- 1 onion, diced

- 2 cloves of garlic, minced

- 2 boneless, skinless chicken breasts, diced

- 2 eggs, beaten

- 2 tomatoes, diced

- 1 cup of shredded cheese

- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and garlic and cook until softened, about 3 minutes.

3. Add the chicken and cook until no longer pink, about 5 minutes.

4. Add the rice and stir to combine.

5. Pour in the beaten eggs and stir until the eggs are cooked through, about 2 minutes.

6. Add the tomatoes, cheese, salt, and pepper and stir to combine.

7. Reduce the heat to low and cover the skillet.

8. Cook for 15 minutes, stirring occasionally, until the rice is cooked through.

9. Serve warm. Enjoy!
