Chicken Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 boneless, skinless chicken breasts, diced
- 2 eggs, lightly beaten
- 1 cup shredded cheese
- 1/2 teaspoon pepper
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tomato, diced
- 1 teaspoon salt
- 2 tablespoons olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced chicken and cook until golden brown, about 5 minutes.

3. Add the onion, garlic, and tomato and cook for an additional 3 minutes.

4. Add the cooked rice, eggs, cheese, pepper, and salt and cook until the eggs are cooked through, about 5 minutes.

5. Serve hot. Enjoy!
