Lamb and Asparagus Rice


- 2 cups of uncooked white rice
- 1 lb of lamb, cubed
- 1 bunch of asparagus, cut into 1-inch pieces
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 2 tablespoons of olive oil


1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the cubed lamb and cook until lightly browned, about 5 minutes.

3. Add the onion and garlic and cook for an additional 2 minutes.

4. Add the asparagus and cook for an additional 3 minutes.

5. Add the rice, salt, and pepper and stir to combine.

6. Reduce the heat to low and cover the skillet. Simmer for 20 minutes, stirring occasionally.

7. Serve the lamb and asparagus rice hot. Enjoy!
