One-Pot Chicken and Rice

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1/2 cup uncooked pasta
- 2 eggs, lightly beaten

Instructions:

1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the chicken, salt, and pepper and cook until the chicken is lightly browned, about 5 minutes.

3. Add the rice and stir to combine. Pour in the chicken broth and diced tomatoes and bring to a boil.

4. Reduce the heat to low, cover the pot, and simmer for 15 minutes.

5. Add the pasta and stir to combine. Cover the pot and continue to simmer for an additional 10 minutes.

6. Remove the pot from the heat and stir in the eggs until combined. Serve hot.
