One-Pot Chicken and Rice

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups uncooked long-grain white rice
- 2 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 2 eggs, lightly beaten
- 1/2 cup uncooked pasta (such as elbow macaroni or shells)

Instructions:

1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the chicken, salt, and pepper and cook until the chicken is no longer pink, about 8 minutes.

3. Add the rice, chicken broth, and tomatoes and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes.

4. Uncover the pot and stir in the eggs and pasta. Cover and continue to simmer until the rice is cooked and the pasta is tender, about 10 minutes.

5. Serve hot. Enjoy!
