Greek Rice Bowl

Ingredients:

- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sliced mushrooms
- 1/2 cup diced tomatoes
- 1/2 cup cooked rice
- 1/2 teaspoon oregano
- 1/4 teaspoon salt
- 2 eggs, lightly beaten
- 2 cups shredded lettuce
- 2 potatoes, diced and boiled
- 2 slices of bread, toasted

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the garlic and mushrooms and cook until the mushrooms are softened, about 5 minutes.

3. Add the tomatoes, rice, oregano, and salt and cook for an additional 5 minutes.

4. Push the mixture to the side of the skillet and pour the eggs into the center. Cook until the eggs are set, about 5 minutes.

5. Divide the lettuce among two bowls. Top each bowl with the rice mixture, potatoes, and toasted bread.

6. Serve warm. Enjoy!
