Veggie-Stuffed Omelette Sandwich
Ingredients:
- 2 slices of bread
- 2 eggs
- 1/4 cup shredded cheese
- 1/4 cup mixed vegetables (such as bell peppers, mushrooms, and zucchini)
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons mayonnaise
- 1/4 cup diced onion
- 1 clove garlic, minced
- 1 shallot, minced
- 2 tablespoons chopped parsley leaves
- 1 tablespoon olive oil
Instructions:
1. Heat the olive oil in a medium skillet over medium heat. Add the onion, garlic, and shallot and cook until softened, about 5 minutes.
2. Add the mixed vegetables and cook until softened, about 5 minutes. Season with salt and pepper.
3. In a medium bowl, whisk together the eggs and mayonnaise.
4. Pour the egg mixture into the skillet and cook until the eggs are just set, about 4 minutes.
5. Sprinkle the cheese over the eggs and cook for another minute.
6. Place one slice of bread on a plate and top with the egg mixture. Sprinkle with the parsley leaves.
7. Place the second slice of bread on top and press down lightly.
8. Cut the sandwich in half and serve. Enjoy!
