Mushroom, Avocado, and Jack Fruit Pasta

Ingredients:

- 1/2 pound of mushrooms, sliced
- 1 avocado, diced
- 1/2 cup of jack fruit, diced
- 1/2 pound of pasta, cooked according to package instructions
- 1/4 cup of red wine
- 1 teaspoon of oregano
- 1 teaspoon of Italian herbs
- 1/2 cup of mixed beans, cooked
- 1/2 cup of butter beans, cooked
- 1/2 cup of lentils, cooked
- 1/2 cup of chickpeas, cooked
- 2 tablespoons of olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the mushrooms and cook for about 5 minutes, stirring occasionally, until they are golden brown.

3. Add the avocado, jack fruit, red wine, oregano, and Italian herbs. Cook for an additional 2 minutes, stirring occasionally.

4. Add the cooked pasta, mixed beans, butter beans, lentils, and chickpeas. Stir to combine.

5. Cook for an additional 5 minutes, stirring occasionally, until everything is heated through.

6. Serve hot and enjoy!
