Cheesy Chicken and Rice

Ingredients:

- 2 cups of uncooked white rice

- 2 tablespoons of olive oil

- 1 onion, diced

- 2 cloves of garlic, minced

- 1 bell pepper, diced

- 2 cups of cooked, shredded chicken

- 2 eggs, beaten

- 1 cup of shredded cheese

- Salt and pepper to taste

Instructions:

1. Cook the rice according to package instructions and set aside.

2. Heat the olive oil in a large skillet over medium heat.

3. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.

4. Add the chicken and cook until heated through, about 3 minutes.

5. Add the cooked rice and stir to combine.

6. Push the mixture to one side of the skillet and add the eggs. Scramble the eggs until cooked through, about 2 minutes.

7. Stir the eggs into the rice mixture and season with salt and pepper.

8. Add the cheese and stir until melted.

9. Serve warm. Enjoy!
