Omelet with Garlic, Jalapeno, and Mushroom
Ingredients:
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 jalapeno, diced
- 1/4 cup diced onion
- 1/2 cup diced tomato
- 1/2 cup sliced mushrooms
- Handful of spinach
- 2 tablespoons diced herring
- 2 slices of ham, diced
- 1/4 cup shredded mozzarella
- 2 tablespoons cream cheese
- 2 tablespoons grated Parmesan
- Salt and pepper to taste
Instructions:
1. In a skillet, melt the butter over medium heat.
2. Add the minced garlic, diced jalapeno, and diced onion. Saute until fragrant.
3. Add the diced tomato, sliced mushrooms, and spinach. Cook until the vegetables are tender.
4. Stir in the diced herring and diced ham.
5. In a bowl, mix together the shredded mozzarella, cream cheese, and grated Parmesan.
6. Pour the cheese mixture over the cooked vegetables and meat in the skillet.
7. Cook until the cheese is melted and bubbly.
8. Season with salt and pepper to taste.
9. Serve the omelet hot and enjoy!
