Make One-Pot Chicken and Pork Rice

One-Pot Chicken and Pork Rice


- 2 cups of long-grain white rice

- 2 tablespoons of olive oil

- 1 pound of chicken breasts, cut into cubes
- 1 pound of pork tenderloin, cut into cubes
- 1 large potato, peeled and diced
- 1 large onion, diced
- 1 cup of fresh broccoli florets
- 1 cup of diced carrots
- 4 cups of chicken broth
- Salt and pepper to taste


1. Heat the olive oil in a large pot over medium heat.

2. Add the chicken and pork cubes and cook until lightly browned, about 5 minutes.

3. Add the potato, onion, broccoli, and carrots and cook for another 5 minutes.

4. Add the rice and chicken broth and bring to a boil.

5. Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
