One-Pot Chicken and Rice

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups uncooked long-grain white rice
- 4 cups chicken broth
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup frozen peas
- 1/2 cup chopped fresh parsley

Instructions:

1. Heat the olive oil in a large pot over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the rice, chicken broth, oregano, thyme, salt, and pepper. Bring to a boil, then reduce the heat to low and simmer, covered, for 15 minutes.

3. Add the chicken cubes and frozen peas, stir to combine, and cook, covered, for another 10 minutes, or until the chicken is cooked through and the rice is tender.

4. Remove from the heat and stir in the parsley. Serve hot. Enjoy!
