Make One-Pot Chicken and Rice

One-Pot Chicken and Rice

Ingredients:

- 2 cups of long-grain white rice
- 2 tablespoons of olive oil
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 2 cups of chicken broth
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the chicken cubes and cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned.

3. Add the bell pepper and garlic and cook for another 2 minutes, stirring occasionally.

4. Add the rice and stir to combine.

5. Pour in the chicken broth and season with salt and pepper.

6. Bring the mixture to a boil, then reduce the heat to low and cover the pot.

7. Simmer for 20 minutes, or until the rice is cooked through and the liquid has been absorbed.

8. Serve hot. Enjoy!
