Make One-Pot Chicken and Rice
One-Pot Chicken and Rice
Ingredients:
- 2 cups of long-grain white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons of garam masala
- 2 eggs, lightly beaten
- 1 onion, diced
- 1 teaspoon of freshly ground black pepper
- 1 teaspoon of salt
- 2 cloves of garlic, minced
- 1 tomato, diced
- 2 cups of small pasta, such as macaroni or shells
Instructions:
1. In a large pot, heat 2 tablespoons of oil over medium heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion, garlic, garam masala, pepper, and salt. Cook for another 5 minutes, stirring occasionally.
4. Add the tomato and cook for another minute.
5. Add the rice and stir to combine.
6. Pour in 4 cups of water and bring to a boil.
7. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
8. Add the pasta and stir to combine.
9. Simmer for another 10 minutes, stirring occasionally.
10. Add the eggs and stir to combine.
11. Simmer for another 5 minutes, stirring occasionally.
12. Remove from heat and let sit for 5 minutes before serving. Enjoy!
