One-Pot Chicken and Rice

Ingredients:

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 2 potatoes, diced
- 1 tomato, diced
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 2 cups uncooked white rice
- 4 cups chicken broth
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the onion, garlic, bell pepper, carrots, potatoes, and tomato. Cook for 5 minutes, stirring occasionally.

3. Add the chicken and cook for an additional 5 minutes, stirring occasionally.

4. Add the rice and chicken broth. Bring to a boil, then reduce the heat to low.

5. Simmer, covered, for 20 minutes, or until the rice is cooked and the liquid is absorbed.

6. Season with salt and pepper, to taste. Serve hot.
