Make One-Pot Chicken and Shrimp Rice
One-Pot Chicken and Shrimp Rice
Ingredients:
- 2 cups long grain white rice
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 lb shrimp, peeled and deveined
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated cheese
- 2 eggs, lightly beaten
- 1/2 cup cooked pasta
Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
2. Add the chicken and shrimp and cook until the chicken is cooked through and the shrimp is pink, about 5 minutes.
3. Add the rice, chicken broth, tomatoes, salt, and pepper and stir to combine. Bring the mixture to a boil, reduce the heat to low, cover, and simmer for 20 minutes.
4. Remove the pot from the heat and stir in the cheese, eggs, and cooked pasta. Cover and let sit for 5 minutes.
5. Serve the chicken and shrimp rice hot. Enjoy!
