Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup cooked quinoa or rice (optional)
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sauté for 2-3 minutes until fragrant.

2. Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes.

3. Stir in the sliced bell pepper, zucchini, and cherry tomatoes. Cook for another 5 minutes until the vegetables start to soften.
