Recipe Name: One-Pot Chicken and Vegetable Skillet

Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sauté until fragrant, about 2 minutes.

2. Add the chicken pieces to the skillet and cook until browned on all sides, about 5-7 minutes.

3. Stir in the sliced bell pepper, zucchini, and cherry tomatoes. Cook for another 5 minutes, stirring occasionally.

4. Season the mixture with dried oregano, dried basil, salt, and pepper. Mix well to combine.

5. Pour in the chicken broth and bring to a simmer. Cover the skillet and let it cook for another 10-15 minutes, or until the chicken is cooked through and the vegetables are tender.

6. Sprinkle grated Parmesan cheese over the top of the skillet and let it melt slightly.

7. Garnish with chopped fresh parsley before serving.

8. Serve the One-Pot Chicken and Vegetable Skillet hot, either on its own or over cooked rice or pasta.
