Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped for garnish

Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes.
2. Add the diced onion and minced garlic to the skillet. Cook for another 2-3 minutes until the onion is translucent.
3. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for 5 minutes, stirring occasionally.
4. Season the mixture with dried oregano, dried basil, salt, and pepper. Stir well to combine.
5. Pour in the chicken broth and bring to a simmer. Reduce heat to low and let the mixture simmer for 10-15 minutes, or until the vegetables are tender and the chicken is cooked through.
6. Sprinkle grated Parmesan cheese over the skillet and stir to combine.
7. Garnish with chopped fresh parsley before serving.
