One-Pot Chicken and Veggie Rice

Ingredients:

-1 cup uncooked white rice
-1 lb boneless, skinless chicken breasts, cut into cubes
-1 cup uncooked pasta (any shape)
-2 medium potatoes, diced
-2 medium tomatoes, diced
-1 medium zucchini, diced
-3 cloves garlic, minced
-2 tablespoons olive oil
-2 cups chicken broth
-Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium-high heat.

2. Add the chicken cubes and season with salt and pepper. Cook until the chicken is cooked through, about 8 minutes.

3. Add the garlic and cook for 1 minute.

4. Add the potatoes, tomatoes, zucchini, and pasta. Stir to combine.

5. Pour in the chicken broth and bring to a boil.

6. Add the rice, reduce the heat to low, and cover. Simmer for 20 minutes, or until the rice is cooked through.

7. Serve warm. Enjoy!
