Make One-Pot Mexican Rice and Beans
One-Pot Mexican Rice and Beans
Ingredients:
- 2 cups long-grain white rice
- 1 cup small pasta (such as macaroni or shells)
- 4 sausages, sliced
- 1 can black beans, drained and rinsed
- 1 can chick peas, drained and rinsed
- 1 can red beans, drained and rinsed
- 2 hake fillets, cut into cubes
- 2 chicken breasts, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the sausages and cook until lightly browned, about 5 minutes.
3. Add the chicken and cook until lightly browned, about 5 minutes.
4. Add the rice, pasta, black beans, chick peas, red beans, cumin, chili powder, garlic powder, oregano, paprika, salt and pepper. Stir to combine.
5. Add 4 cups of water and bring to a boil.
6. Reduce the heat to low, cover the pot, and simmer for 20 minutes.
7. Add the hake and cook for an additional 5 minutes, or until the fish is cooked through.
8. Serve hot. Enjoy!
