Vegetable Fried Rice

Ingredients:

- 2 cups cooked white rice
- 1 large potato, peeled and diced
- 1 small onion, diced
- 2 tablespoons vegetable oil
- Salt and pepper to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the diced potato and onion and cook until the vegetables are tender, about 5 minutes.

3. Add the cooked rice and stir to combine.

4. Season with salt and pepper to taste.

5. Cook, stirring occasionally, until the rice is heated through and lightly browned, about 5 minutes.
