Sausage and Carrot Frittata
Ingredients:
- 2 tablespoons butter
- 1/2 cup diced onion
- 1/2 cup diced carrot
- 1/2 pound cooked sausage, cut into small pieces
- 6 eggs
- 1/2 cup milk
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, melt the butter over medium-high heat. Add the onion and carrot and cook until softened, about 5 minutes.
3. Add the sausage and cook until lightly browned, about 5 minutes more.
4. In a large bowl, whisk together the eggs, milk, salt, and pepper.
5. Add the sausage and vegetable mixture to the egg mixture and stir to combine.
6. Pour the mixture into a greased 9-inch pie plate or baking dish.
7. Bake in preheated oven for 25-30 minutes, or until the center is set and the top is lightly browned.
8. Let cool for 10 minutes before slicing and serving. Enjoy!
