Mexican Rice Bowl
Ingredients:
-1 cup of uncooked rice
-1 can of diced tomatoes
-1 can of refried beans
-1 small onion, diced
Instructions:
1. In a medium saucepan, bring 2 cups of water to a boil.
2. Add the rice and stir. Reduce the heat to low, cover the pan, and let the rice simmer for 15 minutes.
3. Meanwhile, in a separate pan, heat the canned tomatoes and refried beans over medium heat.
4. Once the beans and tomatoes are hot, add the diced onion and cook for an additional 5 minutes.
5. Once the rice is cooked, add it to the pan with the beans and tomatoes. Stir to combine.
6. Serve the Mexican Rice Bowl warm. Enjoy!
