Eggplant and Egg Stir Fry
Ingredients:
-1 eggplant, cut into cubes
-1 egg
-1 onion, diced
-2 tablespoons olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the eggplant cubes and onion and cook until the vegetables are tender, about 5 minutes.
3. Crack the egg into the skillet and stir to combine.
4. Cook until the egg is cooked through, about 3 minutes.
5. Season with salt and pepper to taste.
6. Serve hot. Enjoy!
