Italian Meat and Potato Salad
Ingredients:
- 1 lb ground meat
- 2 potatoes, peeled and cubed
- 1 egg, hard boiled and chopped
- 2 cloves garlic, minced
- 1/2 cup salami, diced
- 1/2 onion, diced
- 2 cups lettuce, shredded
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
1. Heat a large skillet over medium-high heat. Add the ground meat and cook, stirring occasionally, until the meat is browned and cooked through, about 8 minutes.
2. Meanwhile, bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 8 minutes. Drain and set aside.
3. In a large bowl, combine the cooked ground meat, potatoes, egg, garlic, salami, and onion.
4. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the meat and potato mixture and toss to combine.
5. Add the lettuce and toss to combine. Serve immediately.
