Mushroom and Corn Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 cup sliced mushrooms
- 1 cup corn kernels
- 1/2 cup diced onion
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced onion and cook until softened, about 5 minutes.
3. Add the mushrooms and cook until they are lightly browned, about 5 minutes.
4. Add the corn and cook for another 3 minutes.
5. Add the cooked rice and stir to combine.
6. Season with salt and pepper to taste.
7. Cook until the rice is heated through, about 5 minutes.
8. Serve hot. Enjoy!
