Grilled Fish with Parsley, Tomato, and Onion
Ingredients:
- 2 fillets of white fish (such as cod or halibut)
- 2 tablespoons of olive oil
- 1/4 cup of chopped parsley
- 1/2 cup of diced tomatoes
- 1/2 cup of diced onion
- Salt and pepper to taste
Instructions:
1. Preheat the grill to medium-high heat.
2. In a small bowl, combine the olive oil, parsley, tomatoes, onion, salt, and pepper.
3. Place the fish fillets on a greased grill and brush the top of each fillet with the olive oil mixture.
4. Grill the fish for 4-5 minutes per side, or until the fish is cooked through.
5. Serve the grilled fish with the remaining olive oil mixture. Enjoy!
