Make Eggs and Avocado Toast
Eggs and Avocado Toast
Ingredients:
- 2 eggs
- 2 slices of toast
- 1 avocado
- 1 tomato
- ½ teaspoon of pepper
- ½ teaspoon of salt
- 1 tablespoon of olive oil
- 1 tablespoon of lemon juice
- 1 clove of garlic, minced
- 1 tablespoon of onion, minced
Instructions:
1. Preheat a skillet over medium heat.
2. Crack the eggs into a bowl and whisk until combined.
3. Add the olive oil to the skillet and swirl to coat.
4. Add the eggs to the skillet and cook until the whites are set and the yolks are still runny, about 3 minutes.
5. Meanwhile, mash the avocado in a bowl and season with salt and pepper.
6. Toast the bread slices.
7. Top the toast with the mashed avocado, diced tomatoes, minced garlic, minced onion, and a squeeze of lemon juice.
8. Place the eggs on top of the toast and serve. Enjoy!
