Coke-Braised Chicken and Rice
Ingredients:
- 2 chicken breasts
- 1 can of Coke
- 1 cup of uncooked white rice
- 1 cup of water
- 1 tomato, diced
- 2 tablespoons of oil
- 1 onion, diced
Instructions:
1. Preheat oven to 350°F.
2. Heat the oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown, about 5 minutes per side.
3. Remove the chicken from the skillet and set aside.
4. Add the onion to the skillet and cook until softened, about 5 minutes.
5. Add the tomato and cook for an additional 2 minutes.
6. Add the Coke and bring to a simmer.
7. Return the chicken to the skillet and spoon the sauce over the top.
8. Cover the skillet and transfer to the preheated oven. Bake for 25 minutes.
9. Meanwhile, bring the water to a boil in a medium saucepan. Add the rice and cook according to package instructions.
10. When the chicken is done, remove from the oven and serve with the cooked rice. Enjoy!
