Tomato and Onion Pasta

Ingredients:

- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 large tomatoes, diced
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 8 ounces dry pasta
- 2 tablespoons freshly chopped parsley

Instructions:

1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions.

2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

3. Add the tomatoes, oregano, salt, and pepper and cook until the tomatoes are softened, about 5 minutes.

4. Drain the pasta and add it to the skillet with the tomato mixture. Stir to combine.

5. Serve the pasta topped with freshly chopped parsley. Enjoy!
