Make Chicken and Pepper Hash
Chicken and Pepper Hash
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 bell peppers, diced
- 2 potatoes, diced
- 1 tomato, diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked, diced chicken
- 1 egg, lightly beaten
- 1/2 cup shredded cheese
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion and bell peppers and cook until softened, about 5 minutes.
3. Add the potatoes, tomato, salt, and pepper and cook until the potatoes are tender, about 10 minutes.
4. Add the chicken and cook until heated through, about 5 minutes.
5. Pour the egg over the top of the hash and stir to combine.
6. Sprinkle the cheese over the top and cook until the egg is set and the cheese is melted, about 5 minutes.
7. Serve hot. Enjoy!
