Chicken and Potato Gratin
Ingredients:
- 2 chicken breasts, cooked and diced
- 2 eggs, lightly beaten
- 1 cup corn
- 2 potatoes, peeled and diced
- 1 cup shredded cheese
- 1 tomato, diced
- 1 onion, diced
Instructions:
1. Preheat oven to 350°F.
2. Grease a 9x13 inch baking dish with butter or cooking spray.
3. In a large bowl, combine the cooked chicken, eggs, corn, potatoes, cheese, tomato, and onion.
4. Pour the mixture into the prepared baking dish and spread it out evenly.
5. Bake in the preheated oven for 30 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
6. Serve hot. Enjoy!
